Stewed Pork with Hard-boiled Egg in Soy Sauce

Ingredients:
600g pork belly with skin, cut into bite-sized pieces
15 cloves garlic
1 litre water
5 hard-boiled eggs, shelled


Marinade (A)
2 1/2 tbsp castor sugar
3 1/2 tbsp dark soy sauce
4 tbsp light soy sauce
1/2 tsp pepper
1 tsp salt


Marinade (B)
4cm piece cinnamon stick
2 star anise
5 cloves


Method:
a) marinated pork pieces with (A) for several hours or preferably overnight in the refrigerator.
b) combine marinated pork meat with ingredients (B) in a casserole. Add garlic and water and cook on high heat until mixture begins to boil.
c) trun down the heat to medium-low and allow the contents to simmer for 50-60 mins or until the liquid is reduced to about half its amount.
d) add in the hard boiled egg and continue to simmer for extra 5-6 mins.
e) serves this tasty dish with plain rice.
note: pork can replace with chicken
